Ingredients:

• 4 Egg whites
• 175 g – dark chocolate
• 1 cup – Sugar
• 100 g – Apple sauce
• 140 g – self-rising flour
• 500 g – chocolate powder (cocoa)
• 140 g – Walnuts
• 2 tsp – vanilla essence
• 1/4 tsp – salt

Method:

  1. Preheat the oven to 325 C.
  2. Break the chocolate and blend until it is in small even-sized pieces, then set aside.
  3. Blend the sugar, apple sauce and salt for one-and-a-half minutes.
  4. Add the chocolate pieces, blending for a further 30 seconds.
  5. Sift the flour and the cocoa together and add to the mixture.
  6. Add the nuts and vanilla essence.
  7. Beat the egg whites in a separate bowl until light and fluffy, but not dry.
  8. Fold the egg whites using a spoon, into the cake blend.
  9. Pour into a brownie tin and bake for 25-35 minutes or until a skewer comes out clean.
