Ingredients
-1 cup all purpose flour/maida
-1 tsp fennel seeds/saunf crushed
-A pinch of baking soda
-½ cup water approx.. or add as required
-2 tbsp milk powder./malai
-ghee/clarified butter for frying.
-For sugar syrup:
-½ cup sugar
-¼ cup water
-Some saffron strands
-For rabdi:
-1 litres milk,
-3 tbsp sugar or add as required
-A pinch of saffron strands/kesar
How to Cook?
Batter:
-In a mixing bowl take 1 cup all purpose flour, milk pd/malai fennel seeds crushed, baking soda Mix the dry ingredients well.
-Add ½ cup luke warm water and begin to stir to a thick flowing batter without lumps.(can use blender)
-Allow the batter to rest for 30 minutes.
-For the Sugar syrup
-Heat ½ cup sugar and ¼ cup water on a low flame simmer this mixture. stir well let sugar melt
-You need to have 1 string consistency in the sugar syrup. The sugar needs to be kept warm. Put some saffron strands in syrup
-Heat ghee in a pan
-Lower the flame, take one big spoonfull of the batter and gently pour it in the hot ghee.
-Fry on a low to medium till crisp and golden n immediately place them in the warm syrup.remove them after 5 min
-Garnish with almonds n pistachios serve with Rabadi
-You can add cardamom pd in batter
