Ingredients:
• 1 tbsp – oil
• 1 – onion, cut into 1/2 inch cubes
• 1 small – red bell pepper, cubed
• 1 small – yellow bell pepper, cubed
• 1 small – green bell pepper, cubed
• 1/2 tsp – Red Chilli powder
• 1/4 tsp – Turmeric powder
• 1/2 tsp – salt
• For dried Fenugreek leaves:
• In a pan add Fenugreek leaves and dry roast for 3 – 5 minutes until crisp.
• Remove from the heat and crush it into a fine powder.
Method:
- Heat 1 tbsp oil and add cubed onion and fry till light pink in colour.
- Add cubed bell peppers and stir for 1 minute.
- To this add red chilli powder, turmeric powder and salt to taste.
- Mix all the ingredients well and cook covered on low heat for 8 – 10 minutes.
- Do not add water when cooking.
- Sprinkle dry roasted fenugreek powder and serve.
