Ingredients:

• 2 cups – All-purpose flour
• 3/4 cup – Sugar
• 1 cup – Dark chocolate (chopped)
• 1 tbsp – Instant Coffee powder
• 3 tbsp – Pistachios (chopped)
• 1 tsp – Baking powder
• 1/4 tsp – Baking soda
• 2 – eggs
• 1/2 cup – Oil
• 1/2 cup – Yogurt

Method:

  1. Beat the eggs and sugar together until this mixture turns pale and smooth.
  2. Add the coffee powder and beat again.
  3. Meanwhile, sieve together the flour with baking soda, baking powder and keep aside.
  4. Now melt the chopped chocolate with 1/3 cup water in a microwave oven and make a smooth chocolate sauce.
  5. Add this chocolate sauce, oil and yogurt to the egg-sugar mixture.
  6. Beat everything for a while.
  7. Pre-heat the oven to 350 degrees F.
  8. Gradually, add the dry ingredients to the wet ingredients with a spatula until the batter turns smooth.
  9. Gently fold the chopped pistachios to the batter.
  10. Divide this batter to the already greased muffin pan.
  11. Sprinkle a few chopped pistachios over the batter and bake for 20-25 minutes until a skewer inserted comes out clean.
