Ingredients:

• 250 g – Mutton on the bone
• 5 cups – stock
• 1 Onion studded with a Clove
• 1 Bay Leaf
• 2 tbsp – finely chopped Mint
• salt and white pepper to taste

Method:

  1. In a large pan, bring the stock, mutton, onion, bay leaf and salt to the boil.
  2. Simmer for 1 hour until mutton leaves the bone. Strain.
  3. Remove mutton from the bones.
  4. Flake mutton and add to the strained soup.
  5. Bring soup to boil and simmer for 15 minutes.
  6. Add white pepper and pudina before removing from heat.
  7. Put lid on pan, allowing pudina to infuse.
  8. Serve hot with crusty rolls and butter.
