
Ingredients:
• 250 g – Mutton on the bone
• 5 cups – stock
• 1 Onion studded with a Clove
• 1 Bay Leaf
• 2 tbsp – finely chopped Mint
• salt and white pepper to taste
Method:
- In a large pan, bring the stock, mutton, onion, bay leaf and salt to the boil.
- Simmer for 1 hour until mutton leaves the bone. Strain.
- Remove mutton from the bones.
- Flake mutton and add to the strained soup.
- Bring soup to boil and simmer for 15 minutes.
- Add white pepper and pudina before removing from heat.
- Put lid on pan, allowing pudina to infuse.
- Serve hot with crusty rolls and butter.
