Ingredients:

• 1/2 kg- Okra (chopped)
• 1 – Onion (chopped)
• 1 – Tomato (chopped)
• 3/4 tsp – Red Chilli powder
• 1/4 cup – rolled oats
• 1/2 tsp – Cumin seed powder
• 1/2 tsp – Cumin seeds
• 1/2 tsp – Turmeric powder
• 1/2 tsp – coriander powder
• A few sprigs – Curry leaves
• Salt to taste
• 1 tbsp – oil

Method:

  1. Pour oil in a microwave safe bowl and heat it on high temperature for 2 mins.
  2. Add cumin seeds, chopped onions, chopped tomatoes, curry leaves and salt, and cook for 5 minutes on high (stir in between).
  3. Add chopped okra pieces and cook for 3 minutes on high, take out the bowl and add red chilli powder, cumin seed powder, turmeric powder, coriander powder (check for salt) and stir well. Cook on high for another 5 minutes until the vegetables are all done. Add the rolled oats to the almost cooked vegetables, stir well and cook for 3 minutes. Serve hot as side dish with rotis.
