Ingredients:

• 1/2 kg – Potatoes
• 2 bunches – Amaranth leaves or Spinach leaves
• 3 tsp – oil
• 1 tsp – Channa dal
• 1 tsp – Turmeric powder
• 2 tsp – chilli powder
• Salt to taste
• 1/2 tsp – Cumin seeds
• Curry leaves, a few

Method:

  1. Pressure cook the potatoes with their skin, peel, mash and set aside.
  2. Wash the spinach or amaranth leaves and chop fine.
  3. Heat 3 tsps of oil, add the mustard seeds and the curry leaves.
  4. When the mustard seeds splutter, add the cumin seeds, and channa dal and saute for a couple of minutes.
  5. Add the chopped spinach and sprinkle water.
  6. Cover on a low heat till the spinach is tender and dry.
  7. Add to the mashed potatoes, turmeric powder, salt and chilli powder.
  8. Mix well.
  9. Cook for a minute, till everything blends well.
  10. Garnish with chopped coriander leaves.
  11. Serve hot with puri, phulkas and naans.
