Ingredients:

• 85 g – Sugar.
• 1/2 tsp – Vanilla essence.
• 85 g – Peanuts.
• 2 – Egg whites.
• A pinch – Salt.

Method:

  1. Toast peanuts in oven for a few minutes.
  2. Skin, chop and sprinkle with salt.
  3. Beat eggs to a stiff froth, add essence and sugar gradually and continue beating.
  4. Fold in the nuts.
  5. Arrange tspfuls of the mixture apart on a greased and floured tray.
  6. Bake in a slow oven at 150 degrees C (about 300 degrees F) till firm and light brown in colour.
