Ingredients:
• For salad:
• 2 tbsps – finely chopped cucumber.
• 1 tomato, finely chopped.
• 1/2 green chilli, finely chopped.
• 1 tbsp – finely chopped onion.
• Coriander leaves, chopped.
• 3 tbsp – peanuts, broken.
• 1 tsp – desiccated coconut.
• 1/2 tsp – grated ginger.
• Salt to taste.
• .
• For seasoning: 1/2 tsp – oil.
• 1/2 tsp – mustard seeds.
• Curry leaves.
• 1 tsp – Lemon juice.
Method:
- For salad:
- Mix all the salad ingredients in a bowl.
- For seasoning:
- Heat oil in a pan, add mustard seeds.
- Once they splutter, add curry leaves and remove from the heat.
- Add the lemon juice and stir.
- To serve, pour the spice mixture over the salad and mix till it is well-coated.
- Serve fresh.
