Ingredients:

• 450 gms – Potatoes, boiled and mashed.
• 450 gms – Sugar.
• 125 gms – Flour, maida.
• 4 – Eggs.
• 1 – Coconut, extract 1 cup of thick and thin juice.
• 200 gms – ghee.
• 1 tsp – Vanilla essence.

Method:

  1. Boil and mash the potatoes, then add the sugar, a little at a time, and add the flour and the eggs yolks.
  2. Extract one cup of thick juice and a little thin juice from the coconuts. Add this to the mixture.
  3. Let the mixture consistency be a little thin.
  4. Now pour in a vessel add the ghee and cook for 5-7 mins until firm.
  5. Then bake the mixture in a microwave oven till the mixture is cooked and set.
