Ingredients:
• 1 cup – rice.
• 1 bunch – pudina.
• 4 – onions, medium sized chopped.
• 4 – green chillies.
• 1 tsp – ginger, chopped.
• Curry leaves for seasoning.
• Mustard Seeds for seasoning.
• Turmeric powder- a pinch.
• 1.5 tsp – salt.
• 1 tbsp – oil.
• 2 cups – water, sufficient to cook rice.
Method:
- Wash rice and cook well.
- Grind pudina leaves, chillies and onions together without adding water.
- In a kadai, heat oil, add mustard seeds, curry leaves and ginger pieces.
- Allow them to sizzle lightly in oil, then add the pudina-onion paste, cook on medium flame till the water evaporates and the paste starts leaving the kadai.
- Add a pinch of turmeric powder, salt and cook for sometime.
- Add the cooked rice and on a low flame mix the rice and the paste.
- Remove from the flame and close the vessel for a few minutes.
- Mix again and serve with raitha or dahi.
