
Ingredients:
• 30 gms – Butter
• 350 gms – zucchini, thinly sliced
• 2 potatoes, thinly sliced
• 500 gms – pumpkin, thinly sliced
• 2 spring onions, thinly sliced
• 3/4 cup – grated cheese
• Pepper to taste
• 1 tsp – dried Thyme
Method:
- Melt the butter in a microwave-safe bowl on High for 30 seconds, add the spring onions and cook on High for 2 mins.
- In another microwave-safe dish, layer slices of potato, pumpkin, spring onions and zucchini, finishing with a layer of potato.
- Sprinkle cheese, pepper and dried thyme over it.
- Cook on Medium for 30 mins.
