
Ingredients:
• Sooji (Rava) – 2 cups
• Onion – 1 (medium)
• Tomato – 1
• Ginger paste – 1 tsp
• 1 cup – mixed vegetables (peas, diced Carrots – par boiled)
• Oil or Ghee – as required
• Salt – to taste
• Mustard and Curry leaves – a few
Method:
- Saute the rava with 2 tsps of ghee or oil in a pan on medium heat until a very light brown, and keep aside.
- Take a deep pan or kadai, heat 3 tsp of oil or ghee, add mustard seeds, curry leaves and let them splutter.
- Add the chopped onion and saute until its brown.
- Now add the ginger paste to the onion and slightly fry it.
- Add the chopped tomatoes and fry on medium heat.
- Add the parboiled vegetables and 4 glasses of water.
- Wait till the water starts boiling. Once its boils, immediately add the fried rava and keep stirring with a spatula.
- Keep stirring the rava till it thickens.
- Garnish with coriander leaves.
