Ingredients:

• 1 kg – Tomatoes
• 1.5 tsp – Butter
• 3 tsp – chopped Garlic
• 1 – small piece of ginger, chopped
• 1/2 – chilli, chopped
• a handful of coriander leaves, chopped
• Basil leaves for taste
• 1 tbsp – light Cream
• salt to taste

Method:

  1. Puree the tomatoes and keep aside.
  2. Heat a vessel on medium flame.
  3. Add butter and add the chopped garlic, ginger, chilli and coriander leaves. Sautee until a nice aroma emanates.
  4. Add the pureed tomatoes and let it simmer. Add some water if required.
  5. Add basil leaves and salt according to taste.
  6. When the mixture boils, remove the vessel from the stove and let the soup cool.
  7. Strain the soup.
  8. Put the soup on medium flame, add cream and let it simmer for some time.
