
Ingredients:
• 1 kg – Tomatoes
• 1.5 tsp – Butter
• 3 tsp – chopped Garlic
• 1 – small piece of ginger, chopped
• 1/2 – chilli, chopped
• a handful of coriander leaves, chopped
• Basil leaves for taste
• 1 tbsp – light Cream
• salt to taste
Method:
- Puree the tomatoes and keep aside.
- Heat a vessel on medium flame.
- Add butter and add the chopped garlic, ginger, chilli and coriander leaves. Sautee until a nice aroma emanates.
- Add the pureed tomatoes and let it simmer. Add some water if required.
- Add basil leaves and salt according to taste.
- When the mixture boils, remove the vessel from the stove and let the soup cool.
- Strain the soup.
- Put the soup on medium flame, add cream and let it simmer for some time.
