Ingredients:
• 2 cups – whole Wheat pastry flour
• 1 tbsp – active Dry yeast
• 1 cup – lukewarm water
• 1 tsp – salt
• 1 tsp – Sugar
• 1 tbsp – sesame seeds
• 1/4 cup – Olive oil
Method:
- Mix the yeast, sugar and salt in lukewarm water and keep aside for 5 minutes until the yeast mixture turns foamy.
- Mix the whole wheat pastry flour with sesame seeds.
- Gradually add the foamy yeast and olive oil, and knead into a soft dough.
- Place the dough in a greased bowl, cover with a towel and keep in a warm place.
- Let it sit for an hour until it doubles in volume.
- After an hour, punch down the dough and knead again.
- Flatten the dough with a rolling pin and cut into 6 long strips.
- Arrange them one over the other and cut again into 10-12 pieces.
- Arrange these pieces one by one in greased muffin moulds and let them sit for an hour.
- Preheat the oven to 350 F.
- Brush the breads with olive oil, sprinkle some sesame seeds on top and bake on the middle rack for 15-20 minutes until a golden brown crust forms over the bread.
