
Ingredients:
• Zucchini – 2 cups (grated)
• Self raising flour – 3 cups
• eggs – 3
• Brown sugar – 1 cup
• Sugar – 1 cup
• Vanilla essence – 1 tsp
• Cinnamon powder – 1 tsp
• Raisins, assorted nuts – 1/2 cup
• Oil – 1 cup
• Baking soda – 1/2 tsp
• Baking powder – 1/2 tsp
• Salt to taste
Method:
- Sieve the flour along with baking powder once.
- Beat the eggs until fluffy
- Then add sugar, brown sugar, oil and mix well.
- Then add the flour, grated zucchini and mix well
- Now add the essence, cinnamon powder, salt, raisins, assorted nuts and mix for 5 minutes.
- Grease a baking tray with a little ghee/ butter.
- Dust it with flour so that the cake does not stick once it is baked.
- Pour the batter up to the half way mark of the tray
- Pre-heat the oven to 400 degrees F.
- Bake for 50 minutes.
