
Ingredients:
• Chicken breast – 250 gm
• Bread slices – 8
• For salsa
• oil – 1 tbsp
• Onion – 1 big
• Capsicum – 1
• chilli powder – 1/2 tsp
• Cumin powder – 1/2 tsp
• coriander powder – 1/2 tsp
• Garlic – 2 flakes
• salt, pepper, Sugar to taste
• Tomatoes – 500 gm
Method:
- Cover chicken breast with water.
- Add one and a half tsp salt and few black pepper corns.
- Heat till it begins to boil.
- Reduce the flame and simmer till the chicken is cooked.
- Strain and cool the chicken. (Use the stock in other recipe) Shred the meat.
- For Salsa:
- Chop onion and capsicum (discard seeds).
- Blanch, peel and chop tomato.
- Heat oil, fry onion, garlic and capsicum till tender. Add all powders and tomato.
- Add salt, pepper and sugar. Simmer till thick.
- Sandwich two slices of bread with salsa and chicken meat.
