
Ingredients:
• 300 gm – ripe Pumpkin
• 10 slices – bread
• 1/2 cup – Milk
• 1/2 cup – Butter
• 1/2 cup – powdered Sugar
• 2 – eggs
• 5 tbsp – Orange marmalade, beaten till smooth
• 1/2 tsp – baking powder
• 1/2 tsp – dry Ginger powder.
Method:
- Peel the pumpkin and grate finely.
- Break the bread into tiny pieces.
- Beat butter and sugar together till light.
- Add the eggs one at a time, beating well after each addition.
- Add bread, pumpkin, milk, marmalade, baking powder and ginger powder.
- Pour in a pudding mould. (Leave enough space for pudding to rise.)
- Cover with two layers of aluminium foil and seal well.
- Place in a steamer and steam for one hour.
- Cool slightly and turn out on a serving plate.
- Serve warm with orange flavoured custard sauce.
