Ingredients:
• ribbon noodles – 150 gm
• Onion – 1/2 cup, chopped
• Ginger 2 cm
• Garlic – 8 flakes
• chilli powder – one and a half tsp
• beans sprouts – 1/2 cup
• Spinach leaves a handful
• cooked minced Meat – 1/2 cup
• oil – 2 tbsp
• soya sauce – 2 tsp
• Tomato sauce – 4 tbsp
• msg – 1/4 tsp
• Meat stock – 2 to 3 tbsp
• oriental sesame oil – 1 tsp
• eggs 2, scrambled
• salt to taste
Method:
- Cook noodles in plenty of boiling water, to which 1 tsp salt is added.
- Drain, toss in a tsp of oil and keep aside.
- Grind onion, ginger and garlic together to a paste.
- Chop spinach roughly.
- Heat oil in a fry pan (preferably non-stick and large enough to toss the noodles easily).
- Add the ground paste and fry well.
- Add chilli powder and fry for 1/2 minute.
- Add beans sprout and a pinch of salt.
- Stir-fry for 1 minute.
- Add spinach, cook till just soft.
- Add the meat and noodles.
- Add soya sauce, tomato sauce, sat and MSG.
- Mix well. Add sesame oil and stock.
- Toss the noodles till they are very hot and just moist (not soggy). Mix in the scrambled eggs and serve immediately.
