Ingredients:

• 1 cup water, cold
• 1 cup – flour
• 1/3 cup – oil
• 1 – medium eggplant, peeled and sliced into disks (about 8 pieces)
• 1 – potato, peeled and sliced into disks (about 8 pieces)
• 1 – capsicum, sliced into disks (about 4)
• 1 – sweet potato, peeled and sliced into disks (about 8)
• 1 – Egg
• 2 tsp – salt
• bread crumbs – a few
• pepper powder – as per taste

Method:

  1. Beat an egg in a bowl. Add ice water to it. Make sure you use very cold water.
  2. Add flour in the bowl and mix lightly. Be careful not to over-mix the batter. Put a little salt and pepper.
  3. Your tempura batter is ready.
  4. Heat vegetable oil in a deep pan and lightly dip the rest of the vegetables in the batter.
  5. Add some bread crumbs on top of it and immediately fry them until they are crisp.
