
Ingredients:
• 1 kg – Raw mango, peeled and grated
• 1 kg – Sugar
• 50 gms – Garam Masala powder
• 50 gms – Onion
• 25 gms – Ginger
• 25 gms – Garlic
• 4 gms – Acetic acid
• 30 gms – Red Chilli powder
• Salt to taste
Method:
- Finely chop onion, ginger and garlic and mix well with grated mango.
- Add 250 ml water and cook the above mixture till the mango softens.
- Add sugar and continue cooking until mixture is sufficiently thick.
- Add garam masala and red chilli powder
- Add salt and correct the seasoning.
- Cook for a further 5 mins.
- Remove from heat and add acetic acid.
- Allow to cool before bottling.
