Ingredients:

• 1 cup – all-purpose flour
• 1 cup – whole Wheat flour
• 1 cup – Mango puree
• 1/2 cup – Sugar
• 1 tsp – baking soda
• 1/4 tsp – Cinnamon
• 1/2 tsp – salt
• 1 large egg, beaten
• 2 tbsp – melted Butter
• 1/4 cup – chopped Walnuts
• 1/4 cup – Coconut flakes

Method:

  1. Combine flour, sugar, baking soda, cinnamon and salt in a large bowl. Mix well.
  2. Add nuts and coconut, and mix well to combine.
  3. In a medium bowl, beat together the eggs, melted butter and mango puree.
  4. Add to the flour mixture and stir until blended.
  5. Pour batter into a 9×5 inch loaf pan and bake at 325 degrees C for 45-55 minutes, or until a toothpick inserted in the centre comes out clean.
  6. Cool for about 10 minutes.
  7. Remove loaf from pan and let it cool completely before serving.
