
Ingredients:
• 1.5 cup – Rice
• 1 cup – Jaggery / vellam
• 1/4 tsp – Dry sukku powder
• 1/4 tsp – Cardamom powder
• Water as required
• Oil for shallow frying.
Method:
- Soak the rice in two cups of water for 2 hours.
- Then drain the excess water and spread it on a clean cotton cloth for 15-20 mins to dry.
- Now grind the dried rice into a smooth powder.
- Boil the jaggery in 1/2 cup of water with cardamom powder and sukku powder.
- Strain the syrup when the jaggery dissolves.
- Then heat the filtered syrup again until it thickens into a jelly like consistency.
- Now gradually add the rice flour and knead it into a soft pliable dough.
- Divide the dough into 12 equal balls.
- Flatten each ball into a thick circle on a greased banana leaf or on a plastic cover.
- Heat oil in a shallow pan and gently add the flattened ball into the hot oil.
- Fry over low heat till both sides are crisp and dark golden brown in colour.
