
Ingredients:
• 12 slices – bread
• 1 cup – Corn
• 1 cup – cold Milk
• 1 cup – thick white sauce
• 1/2 cup – grated cheese
• 1 small Capsicum
• 1 Spring onion
• 1 tsp – Vinegar
• salt and pepper to taste
• For Sauce:
• 1/2 cup – Tomato puree
• 1/2 cup – Cream
• 1 tbsp – flour
• 2 tsp – Sugar
• salt and pepper to taste
Method:
- Cut the bread slices into rounds.
- Boil the corn. Chop the capsicum, spring onion.
- Mix the white sauce, corn, capsicum, spring onion, salt, pepper and vinegar. Divide into 6 portions.
- Dip each round of bread in milk. Place one portion of the filling on one bread; cover with another.
- Prepare 6 sandwiches this way.
- Grease a baking dish and place the sandwiches.
- Pour over the remaining milk.
- Mix all the ingredients for the sauce.
- Cook over a medium heat till thick.
- Spread the sauce over the bread.
- Sprinkle the cheese on top and bake in an oven preheated to 180 degree C for 25 to 30 minutes.
