Ingredients:

• 1kg – boneless chicken, cut into bite-sized pieces
• 1kg – mixed vegetables (potatoes, carrots, peas, cabbage, beans)
• 5 – green chillies, slit lengthwise
• 1 bunch- Coriander leaves
• 2 – large onions, chopped
• 1 tbsp -chopped Ginger
• 1 tbsp – chopped Garlic
• 2 cups -coconut Milk
• 8 pieces – green Cardamom
• 8 pieces – whole Cloves
• salt
• pepper
• 2 tbsp – oil

Method:

  1. Heat the oil in a pan and add onions, green chillies, ginger, garlic, and whole spices. Stir for 2 to 3 minutes.
  2. Add the chicken pieces and stir for 5 minutes.
  3. Now add the potatoes and carrots.
  4. Stir well and add the coconut cream or coconut milk and 1 cup of water.
  5. Cover and cook till potatoes are nearly cooked (about 30 minutes).
  6. Now add the rest of the vegetables and the coriander leaves, salt, and pepper.
  7. Cook for another 20 minutes so that the meat and vegetables are all cooked.
  8. Add a little more water if the liquid level is low.
  9. Serve with rice.
