Ingredients:
• Musk melon – 3 cup, peeled and chopped
• vanilla flavored soya Milk – 4 cup
• fresh bread crumbs – 1 cup
• Dates – 1 cup, chopped
• Butter – 2 tbsp
• Sugar – 2 tbsp
Method:
- Melt butter in sauce pan.
- Add bread crumbs and sugar.
- Cook stirring till sugar caramelizes and coats the crumbs.
- Cool and store in air tight container.
- Cook dates with 1.5 cup of water on low heat till soft.
- Cool and blend with chilled Soya milk.
- Add melon cubes and keep in refrigerator.
- Just before serving, pour in bowls and sprinkle with caramelized bread crumbs.
