Ingredients:

• 4 cups – mixed vegetables (Carrots, Potato, Cauliflower, Beans and Peas)
• Salt to taste
• 1 tbsp – Garam Masala powder
• 3 tbsp – Ghee or oil
• A pinch of Sugar
• Masala powder (fry and powder):
• 1 tsp aniseeds
• 2 Cardamoms
• 1 – Cinnamon
• 1 – Bay Leaf
• 10 – Cashewnuts
• To grind together:
• 5 flakes Garlic
• 8 Green chillies (fry both with little oil)
• 5 tbsp – Coconut scrapings
• 1 inch – Ginger
• 1 big Onion
• 1 bunch – Coriander leaves
• For garnish –
• Some Coriander leaves
• A dash – Lime juice

Method:

  1. Heat some oil in a pressure cooker. Fry the vegetables in ghee.
  2. Add the ground masala with enough water, salt, garam masala and sugar.
  3. Cook for 7 mins.
  4. Sprinkle over the masala powder, mix well.
  5. Garnish with coriander leaves and lime juice if desired. Serve hot.
