Ingredients:
• 1.5 cups – All-purpose flour
• 20 – Dates (seedless)
• 3/4 cup – Sugar
• 3/4 cup – Milk
• 1/2 cup – Pineapple chunks (chopped finely)
• 1/2 cup – Oil
• 1 tsp – Baking Soda
• 1 tbsp – White Vinegar or Apple cider Vinegar
Method:
- Heat the milk and soak the dates for a few minutes. Add the sugar and grind them as smooth paste and keep aside.
- Mix the pineapple chunks with a teaspoon of flour and keep aside.
- Pre-heat the oven to 350 degree F.
- Meanwhile, sieve the flour and baking soda and keep aside.
- Now, take the dates puree, oil and beat together for a few minutes.
- Add the white vinegar. Give a stir.
- Add the dry ingredients gradually little by little.
- Mix slowly finally and add the pineapple chunks.
- Give a quick stir and pour the cake batter to the greased mould.
- Bake for 20-25 minutes or until a skewer inserted comes out clean.
- Enjoy with a cup of tea.
