Ingredients:
• 2 cups – cooked Rice
• 1/4 kg – ivy gourd, chopped lengthwise
• 1 – onion, chopped
• 2 – green chillies, slit opened
• 1/2 tsp – Garam Masala powder
• 1/4 tsp – Turmeric powder
• Salt
• Oil
• 1 tsp – Mustard Seeds + Urad Dal
• A few Curry leaves
• To roast and grind:
• 1 tbsp – Coriander seeds
• 1 tsp – Flax seeds
• 1 tsp – peppercorns
• 1 tsp – Cumin seeds
• 1 tsp – Mustard Seeds
• 2 tbsp – desiccated Coconut
• 4 – dry Red Chillies
Method:
- Roast and grind all the ingredients to be ground and keep aside
- Heat oil in a tawa, splutter the mustard seeds, urad dal and curry leaves, add the chopped onions, saute until they turn translucent, add the slit green chillies, chopped ivy gourd, salt, turmeric powder and cook in simmer until the vegetables turns soft
- Now add the garam masala powder, ground spice powder, sprinkle some water and cook again for few mins.
- Finally add the cooked rice, toss everything gently until the rice gets mixed well. Serve.
