Ingredients:

• Sugar – 2 cups
• Water – 1 cup
• Fresh Ginger – 5 cm
• Lime – 4, medium
• Yellow colouring – 2-3 drops

Method:

  1. Remove the skin of the ginger and grind it fine in a mixie, adding water to it.
  2. Strain and keep aside.
  3. Remove the juice from the lime and filter it, leaving out the seeds.
  4. In a heavy-bottomed vessel, boil together sugar and ginger juice, stirring all the time, till you get a sticky syrup.
  5. Add lime juice and simmer just once and remove from heat.
  6. Add yellow food colouring (cool) and bottle the syrup.
  7. To serve, add, 1/4th glass juice in a tall glass tumbler and top it with either iced soda or iced water.
  8. Stir once before serving.
