
Ingredients:
• 3 tbsp – Lemon custard powder
• 3/4 cup – Sugar
• 1 litre – Milk
• 1 – orange, segments peeled and deseeded
• 1 – apple, peeled, diced
• 1 – banana, peeled, diced
• 1 – sweet lime, segmented, peeled
• 1 tsp – powdered Sugar
• 1 tsp – Lemon juice
• 1 tbsp – candied or finely grated Orange rind
• 2 pinches – salt
Method:
- Dissolve custard powder in 1/2 cup cold milk. Put remaining milk to boil with sugar.
- Simmer for 5 mins and stir in custard mixture.
- Simmer for 2-3 mins, stirring continuously.
- When thick enough to coat back of a spoon thickly, take off fire.
- Cool to room temperature and stir well.
- Refrigerate, allow to chill well and remove.
- Beat till smooth and fold in orange rind. Transfer back to chiller.
- Put chopped fruit in a large bowl.
- Pour lemon juice over them.
- Add powdered sugar, salt and toss lightly. Chill in refrigerator till required.
- To serve, divide fruit between four individual bowls.
- Pour custard to top bowl to brim.
- Sprinkle candied rind, or just a bit of grated orange rind.
- Serve chilled.
