Ingredients:
• 350 to 400 g – Pasta of your choice, boiled and drained .
• 1.75 cup – milk.
• 3/4 cup – black olives.
• 1/4 cup – chopped parsley.
• 4 1/2 tbsp – butter.
• 3 1/4 tbsp – plain flour.
• 3 1/2 tbsp – Lemon juice.
• 2 spring onions, chopped.
• salt and freshly ground pepper to taste.
Method:
- Melt butter in a pan.
- Add flour and cook on medium heat, stirring constantly for 2 mins. add milk, salt and pepper whisking the mixture as you add the milk. Bring to a boil.
- Reduce the heat and let the mixture simmer for 2-3 mins.
- Add the olives, lemon juice and chopped spring onions. Stir well.
- Add parsley. Mix the sauce with the pasta and serve hot.
