
Ingredients:
• 1 cup – Maida
• 1/2 tsp – baking powder
• 2 tsp – Lemon rind
• 1/2 tsp – vanilla essence
• 1/2 cup – margarine or Butter
• 1/2 cup – powdered Sugar
• 2 eggs, separated
• 1/2 cup – Milk
• 1 tbsp – Lemon juice
• For Topping:
• 2 tsp – Cinnamon powder
• 2 tbsp – Sugar
Method:
- Mix maida with baking powder.
- Cream butter, sugar, egg yolks and rind and vanilla together.
- Fold in maida with milk and lemon juice.
- Beat the egg white stiffly and fold into the cake mixture.
- Pour in a greased 8 1/2 inch round microwave proof cake dish.
- Combine cinnamon and sugar for topping and sprinkle on top (Optional).
- Microwave uncovered on full power for 4-6 minutes.
- Allow to stand for 10 minutes.
- Cut and serve from the dish.
