Ingredients:

• Tomatoes – 2
• Capsicum – 1/2
• Onion – 1
• Garlic – 1 Clove
• Carrot – 1/2
• Oregano – 1/2 tsp
• Basil – 1/2 tsp
• Curry powder – 1 tsp
• Paprika – 1/4 tsp
• Cayenne pepper – 1/4 tsp
• Olive oil – 2 tbsp
• Salt to taste

Method:

  1. Grill the capsicum and chop roughly.
  2. Chop the carrots very thinly as well as tomatoes and onions.
  3. Heat a non-stick pan, add olive oil.
  4. Add onions and fry until brown.
  5. Then add tomatoes, all powders, oregano, cayenne and stir well.
  6. Add the carrots, grilled capsicum and salt to taste.
  7. Cook for 3-4 mins, then serve with pasta or with chapattis.
