Ingredients:
• 2- Potatoes (big)
• 1/2 cup – Onion (chopped)
• 1- Tomato (chopped)
• 1 tsp – Ginger Garlic paste
• 1/2 tsp – Fennel seed powder
• 2 tbsp – Coconut Milk
• 1 tsp – Red Chilli powder
• 5- Curry leaves
• Salt to taste
• Oil.
Method:
- Heat oil in a kadai and saute the onions and the tomatoes, saute for a while. Then add the ginger garlic paste, fennel seed powder, saute until the oil separates.
- Meanwhile cook the potatoes and mash them slightly.
- Add the mashed potatoes, red chilli powder and salt to the cooking masala and simmer for few minutes.
- Now add the coconut milk and curry leaves to the potatoes.
- Cook the potatoes until the oil separates.
- Serve this potato thokku as a side dish for rice and rotis.
