Ingredients:

• 1.5 cups – Bengal gram, soaked in water for 3 hours
• 1 bunch dill leaves, finely chopped
• 1 small bunch coriander leaves, finely chopped
• 5-6 green chillies, crushed
• salt as per taste,
• 2 tbsp – finely chopped Onions (or other veggies like Carrots as desired).

Method:

  1. Drain dal
  2. Reserve 1/4 cup and grind the rest to a batter with minimal or no water.
  3. Add all other ingredients, including reserved whole dal
  4. The batter for vadas is ready
  5. Add 2-3 tbsp hot oil to the mixture.
  6. Heat oil, make patties with moist palm.
  7. Drop carefully into the hot oil.
  8. Fry first one side then the other, till golden brown.
  9. Serve hot with green chutney, tamarind chutney or ketchup.
