Ingredients:

• 375 g – fruit mix
• 300 g – plain flour
• 300g – soft Brown sugar
• 5 – eggs
• 1 tbsp – golden syrup
• 1 tbsp – grated Orange peel
• Silver foil (enough to line a 20 cm cake tin bottom and sides)
• 300g – good quality butter.

Method:

  1. Beat the sugar, butter and syrup till white and creamy. Add the grated orange peel.
  2. When mixed well, add the egg one by one, beating well after each egg.
  3. Add the flour alternately with the fruit mix bit by bit till mixed well.
  4. Pour into the lined cake tin and bake in a preheated oven 150 C for two and a half hours.
