Ingredients:
• 375 g – fruit mix
• 300 g – plain flour
• 300g – soft Brown sugar
• 5 – eggs
• 1 tbsp – golden syrup
• 1 tbsp – grated Orange peel
• Silver foil (enough to line a 20 cm cake tin bottom and sides)
• 300g – good quality butter.
Method:
- Beat the sugar, butter and syrup till white and creamy. Add the grated orange peel.
- When mixed well, add the egg one by one, beating well after each egg.
- Add the flour alternately with the fruit mix bit by bit till mixed well.
- Pour into the lined cake tin and bake in a preheated oven 150 C for two and a half hours.
