Ingredients:

• 4 large Tomatoes
• 2 tsp – Butter
• 4 eggs
• 2 tbsp – grated cheese
• 2 tbsp – chopped Coriander leaves
• Salt and pepper to taste

Method:

  1. Slice off the tops of the tomatoes and scoop out the pulp.
  2. Salt the tomato shells lightly and turn upside down to drain for 10 mins.
  3. Arrange on a well-buttered baking dish and place 0.5 tsp. butter in each.
  4. Bake in a moderate oven at 177 degrees C for 5 mins.
  5. Break 1 egg into each shell and return to the oven to bake until the egg whites have set.
  6. Sprinkle each with salt, pepper and cheese.
  7. Place under the broiler until the cheese has melted and is bubbly.
  8. Garnish with coriander leaves and serve immediately with mashed potatoes and sausages.
  9. Makes 2 servings.
