Ingredients:
• 4 large Tomatoes
• 2 tsp – Butter
• 4 eggs
• 2 tbsp – grated cheese
• 2 tbsp – chopped Coriander leaves
• Salt and pepper to taste
Method:
- Slice off the tops of the tomatoes and scoop out the pulp.
- Salt the tomato shells lightly and turn upside down to drain for 10 mins.
- Arrange on a well-buttered baking dish and place 0.5 tsp. butter in each.
- Bake in a moderate oven at 177 degrees C for 5 mins.
- Break 1 egg into each shell and return to the oven to bake until the egg whites have set.
- Sprinkle each with salt, pepper and cheese.
- Place under the broiler until the cheese has melted and is bubbly.
- Garnish with coriander leaves and serve immediately with mashed potatoes and sausages.
- Makes 2 servings.
