Ingredients:

• Brinjal – 1/2 kg
• Capsicum – 1
• Soya sauce – 1 tsp
• Chilli powder – 2 tsp
• Garam Masala – 1 tsp
• Corn flour – 2 tsp
• Ginger-garlic paste – 1 tsp
• Salt to taste
• Coriander leaves – 1/4 cup, chopped
• Onion – 1, big
• 1 tsp – Cumin seeds
• Green chillies – to taste
• 2- Tomatoes

Method:

  1. Heat oil in a pan and splutter the cumin seeds.
  2. Add onion, ginger-garlic paste, green chillies and saute until the onion turns pink.
  3. Add sliced brinjal. Sprinkle salt and fry until the brinjal is partially cooked.
  4. Add capsicum, tomato, the spices, soy sauce and salt to taste.
  5. Fry until the vegetables are soft.
  6. Mix corn flour with water and add to the gravy. Boil until the gravy thickens.
  7. Garnish with coriander leaves and serve hot with chapati.
