
Ingredients:
• Brinjal – 1/2 kg
• Capsicum – 1
• Soya sauce – 1 tsp
• Chilli powder – 2 tsp
• Garam Masala – 1 tsp
• Corn flour – 2 tsp
• Ginger-garlic paste – 1 tsp
• Salt to taste
• Coriander leaves – 1/4 cup, chopped
• Onion – 1, big
• 1 tsp – Cumin seeds
• Green chillies – to taste
• 2- Tomatoes
Method:
- Heat oil in a pan and splutter the cumin seeds.
- Add onion, ginger-garlic paste, green chillies and saute until the onion turns pink.
- Add sliced brinjal. Sprinkle salt and fry until the brinjal is partially cooked.
- Add capsicum, tomato, the spices, soy sauce and salt to taste.
- Fry until the vegetables are soft.
- Mix corn flour with water and add to the gravy. Boil until the gravy thickens.
- Garnish with coriander leaves and serve hot with chapati.
