Ingredients:

• 200 g – broccoli, chopped finely
• 2 tbsp – butter/oil
• 2 tbsp – sifted flour
• 1/4 tsp – powdered black pepper
• 3/4 cup – Milk
• 4 cups – stock or water
• 1/2 tsp – Celery salt
• 2 tsp – salt
• Cream for garnishing

Method:

  1. Heat butter or oil in a heavy saucepan. When the butter melts or the oil is steaming, add half the broccoli.
  2. Turn around a few times, lower the heat and continue sauteeing for about half a minute.
  3. Add the flour and turn it around until the mixture leaves the sides of the pan.
  4. Remove from heat and add the stock gradually, stirring all the time to avoid lumps.
  5. When the mixture cools, blend in a blender.
  6. Place the pan back on heat and add the remaining broccoli, milk, black pepper and celery salt.
  7. Cook over high heat, stirring a few times, until it comes to boil. Then simmer over low heat for at least 10 minutes.
  8. Serve hot garnished with cream.
