Ingredients:

• 1.5 cups – unbleached flour
• 2 tsp – baking powder
• 1/2 cup – shredded Coconut
• 2 tbsp – maple syrup
• 2 tbsp – Honey
• 3/4 to 1 cup – reduced fat Milk
• 6 – Egg whites
• 1/2 cup – fat-free-egg-substitute
• 4 tbsp – Canola Oil

Method:

  1. Preheat your waffle iron.
  2. Mix the flour, baking powder and coconut in a large bowl.
  3. Whisk together the syrup, honey and egg substitute in a small bowl.
  4. Stir in the oil and milk.
  5. In a medium bowl, beat the egg whites until stiff.
  6. Make a well in the centre of the dry ingredients.
  7. Pour in the liquid mixture and mix well.
  8. Then gently fold the egg whites into the batter.
  9. Bake in the waffle iron until golden brown.
