Ingredients:
• 2 cups – All-purpose flour
• 1 cup – Silken Tofu (pureed)
• 1 tsp – Baking powder
• 1 cup – Sugar
• 1/4 tsp – Salt
• 1/4 cup – Milk
• 3/4 cup – Butter (room temperature)
• 1 tsp – Vanilla extract
• 1/2 tsp – Cinnamon powder
• 1/4 cup – Nuts (cashews, Almonds and walnuts)
• 1/4 cup – Dry fruits(raisins, cherries, Apricots and dates)
• A few Almond flakes
Method:
- Preheat the oven to 350 degree F. Sift together the flour, baking powder, cinnamon powder and salt in a bowl. Keep aside.
- Cream the butter and sugar together until they turn soft.
- Add the milk, vanilla and beat it again well.
- Add the pureed tofu to the wet ingredients. Mix it with a wooden spoon.
- Add the dry ingredients, fruits and nuts to the wet ingredients gradually. The batter will be of semi-solid consistency.
- Spread the batter in a prepared loaf pan. Sprinkle the almond flakes over the batter and bake for 30-35 minutes in the middle rack until a skewer inserted comes out clean.
- Let the cake cool completely and slice it as per your need.
