
Ingredients:
• 1 small brinjal, cut into 1 inch cubes
• 1 small sweet potato, cut into 1 inch cubes
• 250 gms – mixed vegetables like peas, carrots, French beans and Capsicum
• 1/2 tsp – Turmeric powder
• 1 tsp each – ground cumin and Coriander seeds
• 1 medium tomato, peeled and pureed
• 1 cup – Curd
• 1/2 cup – grated Coconut
• salt to taste
Method:
- Mix all the vegetables together with salt and turmeric powder.
- Pour in 2 cups of water and cook till the vegetables are done and little water is left.
- Add the remaining ingredients and simmer for 5 mins.
