
Ingredients:
• 2 cups – All-purpose flour
• 1/2 cup – Sugar
• 1/4 cup – Butter
• 1/4 cup – Oil (sunflower or canola)
• 1 cup – Buttermilk
• 1/4 cup – Walnuts (ground into fine powder)
• 1 tsp – Baking powder
• 1/2 tsp – Baking soda
• 1 tsp – Vanilla extract
• 2 tbsp – Chopped Walnuts
Method:
- Preheat the oven to 350 degrees F.
- Sieve the flour with baking soda and baking powder.
- Add the walnut powder, mix and keep aside.
- Beat the sugar, butter and oil until the sugar gets well dissolved.
- Add the buttermilk, and vanilla extract, and whisk everything well.
- Gradually add the dry ingredients to the wet ingredients, mix it well with a spatula
- The batter will be quite thick but don’t over mix the batter, else your muffins will turn hard.
- Drop a large scoop of batter into the silicon muffin tray and bake for 20-25 minutes.
- Serve with a cup of tea.
