Ingredients:

• 500 g – Brinjal
• 1 kg – curds
• 3-4 – Green chillies
• 3 tbsp – Coriander leaves
• Salt
• 4 tbsp – Ghee
• 1 tbsp – Ginger Garlic paste
• 3 tsp – Cumin seeds
• 1 tsp – powder of Cinnamon Cardamom and Nutmeg

Method:

  1. Mix ginger garlic paste with jeera
  2. Add this to the mixture of cinnamon, cardamom and nutmeg powder with chillies and coriander
  3. Divide into 2 portions. Rub half mixture into brinjal and add the other into the curds
  4. Heat ghee, fry brinjal on very low heat till done
  5. Add curds and mix well. Simmer for 2 mins
  6. Serve with brown rice
