Ingredients:
• 500 g – Brinjal
• 1 kg – curds
• 3-4 – Green chillies
• 3 tbsp – Coriander leaves
• Salt
• 4 tbsp – Ghee
• 1 tbsp – Ginger Garlic paste
• 3 tsp – Cumin seeds
• 1 tsp – powder of Cinnamon Cardamom and Nutmeg
Method:
- Mix ginger garlic paste with jeera
- Add this to the mixture of cinnamon, cardamom and nutmeg powder with chillies and coriander
- Divide into 2 portions. Rub half mixture into brinjal and add the other into the curds
- Heat ghee, fry brinjal on very low heat till done
- Add curds and mix well. Simmer for 2 mins
- Serve with brown rice
