
Ingredients:
• 1 – Medium size Cabbage
• 1 cup – Cooked Green peas
• 2 – Medium sized onions, chopped
• 1 – Bay Leaf
• Salt to taste
• 1 tsp – Chilli powder
• 1 tbsp – Chopped Mint
• Tbsp – Oil
• 2 – Tomatoes, chopped
• 1/2 tsp – Cumin powder
Method:
- Wash and trim the outer leaves of the cabbage, cut into quarters and then shred it, throw away the hard centre core.
- Heat oil in a pan and fry the chopped onions till golden brown.
- Add the tomatoes, bay leaf, peas, shredded cabbage, chilli powder, cumin powder, salt and mix well.
- Cover and simmer for 10 minutes.
- Transfer to an ovenproof dish.
- Sprinkle the mint on top.
- Bake in a moderate oven (355 degrees F) for 15 minutes.
- This dish should be moist.
- Serve with toast or rice.
