Ingredients:

• 1 – Medium size Cabbage
• 1 cup – Cooked Green peas
• 2 – Medium sized onions, chopped
• 1 – Bay Leaf
• Salt to taste
• 1 tsp – Chilli powder
• 1 tbsp – Chopped Mint
• Tbsp – Oil
• 2 – Tomatoes, chopped
• 1/2 tsp – Cumin powder

Method:

  1. Wash and trim the outer leaves of the cabbage, cut into quarters and then shred it, throw away the hard centre core.
  2. Heat oil in a pan and fry the chopped onions till golden brown.
  3. Add the tomatoes, bay leaf, peas, shredded cabbage, chilli powder, cumin powder, salt and mix well.
  4. Cover and simmer for 10 minutes.
  5. Transfer to an ovenproof dish.
  6. Sprinkle the mint on top.
  7. Bake in a moderate oven (355 degrees F) for 15 minutes.
  8. This dish should be moist.
  9. Serve with toast or rice.
