Ingredients:

• 3 – eggs
• 1 cup – vegetable oil
• 2 cups – Sugar
• 1 tbsp – vanilla extract
• 2 cups – cantaloupe, pureed
• 3 cups – flour
• 1 tsp – salt
• 1 tsp – baking soda
• 3/4 tsp – baking powder
• 2 tsp – Cinnamon powder
• 1/2 tsp – ground Ginger

Method:

  1. Preheat oven to 165 C.
  2. Lightly grease and flour two 9 e 5 inch loaf pans.
  3. In a large bowl, beat together eggs, oil, sugar, vanilla and cantaloupe.
  4. In a separate bowl, sift together flour, salt, baking soda, baking powder, cinnamon and ginger.
  5. Stir flour mixture into cantaloupe mixture, stir and combine.
  6. Pour batter into prepared pans.
  7. Bake in preheated oven for 1 hour, until a toothpick inserted into the loaf comes out clean.
