Ingredients:
• 1/2 cup – moong dal (soaked for 30 minutes)
• 2 – carrots, grated
• 1 cup – grated Coconut
• 1 – Lemon
• 1 bunch – Coriander leaves
• salt to taste
• 2 – green chillies, chopped
• 1 tsp – oil
• For seasoning: 1/2 tsp – Mustard Seeds
• 1/2 tsp – Cumin seeds
• 1/2 tsp – Urad Dal
• 1 – Red Chilli
Method:
- Mix the moong dal, grated carrot, grated coconut, chopped chillies, coriander leaves, salt and lemon juice.
- Heat oil and temper the mustard seeds, cumin seeds, urad dal and red chilli.
- Add the moong dal-carrot mixture and toss well.
- Serve immediately.
