Ingredients:

• 3 cups – Basmati Rice
• 2 cups – fresh grated Coconut
• 1 tbsp – mustard seeds, raw
• 7 – Red Chillies
• 2 stalks – Curry leaves
• Salt to taste
• 1 tbsp – oil
• 2 tbsp – Peanuts
• 1 tsp – Tamarind paste or 2 tsp of Lime

Method:

  1. Cook the rice separately and allow it to cool.
  2. Blend the coconut, red chillies, mustard seeds, tamarind paste or juice in a blender, without adding water.
  3. Heat oil in a pan or kadai.
  4. Add the whole peanuts. Fry till it turns light brown.
  5. Add the curry leaves and add the blended masala.
  6. Fry this paste for 5 to 6 mins or until all the ingredients are well incorporated.
  7. Add salt to the masala and mix it with rice.
  8. Ready to serve.
