Ingredients:
• 3 cups – Basmati Rice
• 2 cups – fresh grated Coconut
• 1 tbsp – mustard seeds, raw
• 7 – Red Chillies
• 2 stalks – Curry leaves
• Salt to taste
• 1 tbsp – oil
• 2 tbsp – Peanuts
• 1 tsp – Tamarind paste or 2 tsp of Lime
Method:
- Cook the rice separately and allow it to cool.
- Blend the coconut, red chillies, mustard seeds, tamarind paste or juice in a blender, without adding water.
- Heat oil in a pan or kadai.
- Add the whole peanuts. Fry till it turns light brown.
- Add the curry leaves and add the blended masala.
- Fry this paste for 5 to 6 mins or until all the ingredients are well incorporated.
- Add salt to the masala and mix it with rice.
- Ready to serve.
