
Ingredients:
• 2 cups – Potatoes (cooked and cubed)
• 2 – Onions (finely chopped)
• 1/2 cup – Spinach (chopped)
• 1/4 cup – Drumstick leaves (frozen)
• 1/4 cup – Methi leaves (frozen)
• 1 tsp – Red Chilli powder
• 3 – Garlic Cloves (crushed)
• 1 tsp – Fennel seeds
• salt to taste
• oil as needed
Method:
- Heat oil and fry the fennel seeds.
- Add the chopped onions, salt and crushed garlic cloves. Saute for a few minutes until the onions are translucent.
- Add the potatoes and red chilli powder and cook for a few seconds.
- Add the spinach, drumstick leaves and methi leaves to the potatoes.
- Cook on simmering flame for a few minutes until the oil separates.
- Serve hot with rice or roti.
